Vinification: Fermentation in rough concrete tanks with natural pied de cuve without selected yeasts, fermentative maceration for 24 days with daily punching down of the cap.
Soft pressing and refining for 6 months in rough cement (not vitrified) before bottling. 

Tasting notes: Hints of Mediterranean scrub and shrubs give way to a mineral note that recalls ' clay. In the mouth it is pleasantly savoury and fresh with a delicate tannin.
