Vinification: Fermentation in steel with natural pied de cuve without selected yeasts, fermentative maceration for 30 days with daily punching down of the cap. Soft pressing and aging for 6 months before bottling. ' bottling: 55% in steel, 45% in used white wine barriques with batonnage sur lie.

Tasting notes: Mediterranean scrub shrubs, mineral and complex, with delicate evolved wood notes. It closes with a pleasant salty vein.
